Raw vegan brownies recipe

Today I made those incredibly fantastic yummy healthy brownies:


Ingredients:
  • 2 cups pecans OR walnuts
  • ¾ cup cacao powder
  • pinch sea salt
  • 2 cups medjool dates
  • ¼ cacao nibs (optional)
Method:
  1. In the food processor, process the pecans until they are a roughly ground flour texture.
  2. Add cacao powder and salt and process again to combine (make sure the lid is on properly so you don’t breathe in the cacao powder cloud).
  3. Add medjool dates and combine until a ball forms.
  4. If you want a more fluffy, airy brownie rather than a dense one, process the pecans less and medjool dates left, stopping before a ball forms.
  5. In a small pan or container, press the brownie mixture down. Sprinkle cacao nibs on top.
  6. Freeze for a few hours to harden and set.
  7. Store in the fridge or freezer (I like the freezer better).
Notes:
For a fudgier brownie, try adding 1-2 Tbsp of liquid sweeter such as maple syrup, agave syrup or coconut nectar.

I didn't process the nuts enough, that's why they're so "chunky" hehe. But they are yummy as well :-D

Recovery is possible


I'm beginning to get my body back. It's scary! But I also like it, because I haven't been in healthy shape for over 3 years now. It actually feels kind of comfortable. But as I said, scary.
I've convinced myself that I won't continue gainig weight forever. My body will get to its healthy weight and stay there, there is if I don't eat more than what's normal. And by that I don't mean not eating a little bit too much of chocolate in one day or have a one day where you almost only eat unhealthy food.
No one gains weight by eating unhealthy once in a while. You gain weight if you eat 5000 kcal a day over a long time and don't move much. Believe it or not, but it's true.

Even though my body is getting healthier, I still have to take enzyms to help my stomach digest food, and a lot of vitamins. I will probably have to do that for some time, months or even years.

Remember! Food won't hurt you, but your eating disorder will. Food is necessary to live. No food = no life.

Berry breakfast

My breakfast this morning:


Yoghurt with raspberries, blueberries and dates. Yum! Definetely one of the best breakfasts I've had in a while.
Funny thing is, before I started recovery, dates were high on my list of fearfoods. But now I can't get enough of them!
And and and and I can proudly say that I've comepletely removed 8 items of my list of fearfoods. Only 39+ to go :-D

Friday the 13th

Well, a little mobile blog post is always needed once in a while, right?
I've had better days, to put it that way. Like I said yesterday I haven't been at school for the last two days, so coming back today was difficult. PLUS my psychologist was coming to my school to have my appointment there.

Since I was so anxious I decided to take my camera with me. BEST idea I've ever had! Looking at life through a lense is much easier than facing it yourself! It helps and I have a good time, so why not?
I actually put on make-up today to try to look a little bit pretty, but nooooo... Of course I had to cry like a baby during my appointment, so that was pretty much ruined. Typical. But not weird considering it's Friday the 13th ;) nja, I don't really believe in those kind of things, but it's fun to kid around with.
Aaand I'm feeling kind of rebellious today, so here's a pic of me hehe
P.s. I'm going to try out some new recipes soon and will post them here if they turn out good, so keep up for updates! :)

My suicide story

Since it is suicide prevention week, I want to share a little bit of my story.
I have been struggling with suicidal thoughts and self-harm since I was 3 years old, that’s really scary! I didn’t get proper help until I was 5 years old, because no one believed my mom that I had these kinds of problems because I was so young. But guess what? As a 4 year old, I had already almost committed a suicide 3 times…  I got diagnosed with anxiety and depression at age 5 and was on medication from that time till I was 9 years old. Lucky me got in a remission from the disorders and I didn’t realise how lucky I really was. Until two years ago.

 The last couple of years haven’t been easy, actually the exact opposite. After almost two years of struggling with an ED (without realising it), isolating myself, being left out and teased, I exploded. I had been holding everything inside for so long and I regret not opening up earlier. What I didn’t know at that time was my case was much more serious than I thought. I had those typical disordered thoughts that I didn’t matter, that I deserved to die and that everyone would be better off without me. 


I went to the school therapist to ventilate and get everything off my chest. I didn’t think it mattered, but I just wanted to tell someone how I was feeling. Before I even had time to blink was he on the telephone with the local children and youth psychiatric health station to get me an emergency appointment. Since then (September 2011) I’ve been in therapy. But despite of that, I tried to commit suicide 5 times that school year, and 7 times the next one (last year). I had 4 emergency appointments to evaluate if I should be admitted to a hospital to keep me from doing anything stupid, but it was always on the edge, so they evaluated that I could be at home. What they didn’t know was that the nights after those appointments, I self-harmed a lot (nut by cutting, I’ve never cut, but by punching myself, banging my head into things and kicking stuff).  I felt like I wasn’t taken seriously, that I didn’t matter, and that only made thing worse. Finally last year I was admitted to a hospital. I say finally, because that was the turning point. I FINALLY got proper help! After 14 years of not being taken seriously! 

What I’m most thankful for now, is that I didn’t take my own life! I can’t imagine how my family would have felt if I had. By taking your own life you are taking away the pain, but you are also taking away the chance of things getting better! You haven’t lived you happiest days yet! Life isn’t over, even though you want it to. Life goes on, even though it is without you. Very interesting, exciting, happy things will happen and if you give up now, you won’t experience those things.

It is so important to take people seriously! No matter how much you don’t want to believe them, because when it comes to suicide, NO ONE lies! You wouldn’t kid around by saying that you wanted to kill yourself. That simply isn’t funny!

Smile to the lonely boy sitting alone in the corner of the classroom, to the girl that looks sad at the bus stop, to the shy girl walking in the halls looking at the ground. Say hi to them! You never know if that smile or “hi” saves a life. It could be the only thing that makes them survive the day. Think about it!
Smiles from stranger on the street, from people at school and from teachers really make my day! I remember when I was at my worst, there was this one teacher at school that took her time to talk to me, to say hi on her way to teach another class, to smile to me and show that she cared. I’m so thankful for that she took time to do those things because that literally saved my life! or as I like to say: she helped me to save myself because you can't count on people to save you, the only one who can and will save you is you! They can help you realise that you can be saved, but they can't save you. You have to do the work, it is hard and takes time, but you are worth it! Talk to people, tell them how you are feeling and if you want to, see a therapist/phsycologist/phsyciatrist.

 Maybe medication can help you to take the first step. They can make you strong enough mentally to be able and want to take the steps that lie ahead. But if you don't want them, that's comepletely ok as well! Everyone has their own point of view. In my case they helped me, but that doesn't mean they will help you, or that you need them. Don't take any perscription from a phsyciatrist that you've only talked to for 15 minutes, see them at least couple of times before.  
You can do this! You can survive! You can save yourself! Smile whenever you go past a mirror, even though you don't like what you see. After sometime this smile actually will increase your selfesteem and you'll feel better about yourself. Try it! 

Who am I?


I’m home from school today because I’m really fighting to stick to recovery these days. Everything in school triggers me, and I’m extremely triggered now and that’s not a good thing. I really want to get better, but being in school with all those people that judge me, look at me and talk about me while I’m really hurting really doesn’t make things any better. I know I can’t isolate myself, but now I really want to… I need time to think. Think about how I’m going to tackle this, to get to know myself outside my eating disorder and etc.

I’ve been feeling extremely empty recently. I can stare at an empty wall for hours if I didn’t have to do other things. I am completely absent. I don’t have any hobbies, except photography, I don’t have anything outside of school; I really don’t have anything anymore. My eating disorder took everything!
Before the summer vacation and during the summer I was in a hospital. During that time I was only a patient. A patient locked up and not connected to anything at all. And the time before that I wasn’t me at all, so who am I really?

The only thing I know about myself is that I’m a girl with diagnoses, more than one and more than two. I know I enjoy photography, but that’s all. It’s o sad and pathetic.
Right now I sit here in front of the laptop and I couldn’t feel emptier. I’m not sad, I’m not frustrated, I’m not happy, I’m not ok. I’m just here. Nothing really matters anymore. I’m neither me nor a patient anymore. I’m nothing.  I can feel the control slipping through my fingers. It disappears a little every day. I’m losing everything I’ve had for almost 4 years. I can’t remember what I had before that.



I’ve changed so much since before my ED, and I can’t expect myself to be the person I was back then again. In addition to that I only was 13 years old at that time, and no one I know is the same person at 17 years old as they were at 13. You get much more mature during that time. I know I’ve gotten more mature, but I’ve always been mature. So I don’t really know. My life has kind of always been around my ED.

Hehe I know, it’s a really depressing post, but hey, that’s how my life is atm.
Don’t get me wrong. I’m not giving up on recovery! I’m trying to continue it, but it’s hard.

p.s. I haven't gotten into making the blog look good, I simply don't have the time or the energy. But I will get to it soon!

Breakfast


My breakfast this morning:

  • Lactose free yogurt, since I'm lactose intolerant at the moment due to lack of nurishment over long time.
  • 1 tbs Sugarfree apple and raspberry jam
  • 6 chopped up fresh dates
After I tasted it, I drizzled some cinnamon over it and it was YUMMY! Definitely going to make this more often!
The beauty of this is that you can use whatever you like! You don't have to use dates, or this kind of jam. If you like apples, then you use apples! You like blueberry jam? then you use blueberry jam! 
Yogurt goes with almost anything. I LOVE IT!

Yesterday I went to the store to buy some yogurt nuts because I decided to push myself a little further. Since yogurt nuts were my major fear food and going to the store to buy something food related AND unhealthy, I was freaking out. When I got to the check out I almost turned around to leave he box of nuts, but since there wasn’t any line I thought that would just look stupid. So I bought the nuts, and then I thought everyone was looking at me. A woman stared at me and my nuts and that made my ED voice even stronger, telling me that the woman was staring at me and wondering how the hell a person like me can allow myself to buy a food item filled with calories. I almost started crying and wondered if I should turn arround, return those nuts and get my money back.

But I managed to turn few of ED’s thoughts arround! What if that lady was looking at me and my nuts because she was wondering if she should buy some too? or maybe she was just staring at nothing and just thinking? So I managed to get out of the store and take the bus home.

When I got home I actually ate the nuts!!! AND this morning when I weighed myself (I know I’m not supposed to) I hadn’t put on 30 kg, like I thought I would. I really do not regret any of those nuts I ate yesterday!

Shooting stars


Yesterday was a pretty shitty day. The devil on my shoulder (Ana) was mightier than ever and last night I lost all control. I sneaked out after my mom had fallen asleep, just to run. Run to burn more calories. I'm not suppose to run since I am an exerciseaholic and my joints are in a bad shape due to a lack of nourishment for a long time. But I did it anyway, or Ana did. I couldn't stop running. It didn't matter how much I wanted to, I couldn't. I had control over my thoughts, but not my body. That was a really weird experience...

When I arrived home again, I looked up to the sky. It was so pretty! Prettier than anything I've ever seen before! It sparkled with stars. I went inside to get my camera and while the camera took pictures I enjoyed the view. If you didn't know, when taking pictures of stars and other things in the dark, you need to have a really slow shutterspeed. I used a shutterspeed that took 30 sec to take one picture. 


Me, myself and I + my camera + stars and galaxies = best time ever! 




When I was about to go inside, I took one last look before I had to go to sleep, to maybe dream something as pretty instead of those nightmare's I've been having. And suddenly a star flew across the sky. It was a shooting star! I've never seen one that clearly before. It was a fantastic experience! And of course I wished upon it. 
I wished to recover. That's what I want the most at this moment, and I hope the wish comes true. I will at least work towards that.

The shooting star actually turned a shitty day into one of the best days I've ever had! It's so weird!

Being sick is NOT a good sparetime activity!

I've got time off of school this whole week, and of course I had to catch a cold. It's so typical! Like it wasn't enough having digestion problems...
But well I have to make the best out of it, so I made a cup of tea. My favourite: Mango & passionfruit 
I also put on som music, and now I'm just relaxing, going through some blogs and of course: drinking tea :) 




I'm a bit afraid of getting triggered now since I don't have an appetite, at all. Oh well, not a bit, but A LOT afraid!   And since I'm kind of triggered before, this won't make it any better. I guess I just have to pick myself up and keep fighting. Not much else to do in this situation.

Some of my photographies

I've been interested in photography since forever. When I was little (2-7 years old) we had a little, red camera with a film and when I got to borrow it, nothing, and I really mean NOTHING could make me happier! When I was 8 years old I got my own digital camera as a christmaspresent. Those were the best christmases ever! I don't remember any present I've ever gotten that I've been as happy for. I'm always extremly happy and thankful for everything I get, but this camera topped everything!
2011, my mom bought a Canon 1100D and she didn't really get to use it much, since I was always using it :P But finally I got my own DSLR last year, Nikon d40x, and since then I've bought two lenses a good camerastand and a pro-bag.

Photography really saved my life! It's the only thing that has always been there, it makes me happy and distracts my destructive thoughts. Thank God for camera's!

Tired of being tired

I'm tired of being tired all the time. I'm tired of freezing. I'm tired of being in bad shape. I'm tired of being constipated. All I can do is wait. Wait for my body to start working again. I'm in worse shape than my grandma, and she has lungproblems.... that's how bad shape I'm in.

I went for a walk earlier today (NOTE: my first walk alone in weeks!!!! I'm proud!) I walked for about an hour and stopped regularly to take pictures. (I photograph a lot, a alot, a lot! ) I went to a park here nearby and photographed birds, nature, horses etc. On my way home my body was giving up. My feet were unbelievebly heavy, my eyes were about to close and I almost fainted. BUT my mind was set on finishing this walk. I was going to get myself home! I just had to! I got home, but it took a hell of a lot longer time than usual.... and now I'm about to fall a sleep, even though I slept for 11 hours last night. 
I'm tired of this. I wish it never went this way!

Story of an ED

You know those days when you don't want to get out of bed? The days you don't feel like interact with anyone and just want  be by yourself? The days you don't even see a point in existing and nothing goes your way? You're tired, so extremely tired. Tired of everything and everyone, especially yourself. You're disappointed, unhappy, depressed, sad and hopeless. You're trying to decide wether you should get out of bed or not. "Not" seems much more appealing, but you go for "get out of bed". You go for the challenging choice and you get out of bed, get dressed and if you're feeling extremely strong and powerful, you poor some low calorie cereal in a bowl and then drown it in low fat milk. You look at the clock, it's 5 to 7 am. You throw what's left of your breakfast in the trash because you wouldn't dare to finish those 50 grams. You grab your bag and run out the door, without a lunch pack, to catch the only bus that drives through your neighborhood this time of day. Technically, you didn't have to run. You only ran to burn the calories you just consumed. Filthy, disgusting calories. The guilt is killing you. Why were you so weak? why did you give up and eat? You run a little further, past your bus stop, and towards the next one couple hundred meters away. You check what time it is and see that you have enough time to run to yet another bus stop further away. When you arrive at the third stop you see the bus come driving towards you. You get on the bus, sit down and finally you can catch your breath. Your heart is beating like never before, your body is about to give up, but you are happier than ever before. Or at least you feel like you are, but the truth is: you're miserable. You know you shouldn't have run, you know you're supposed to be proud of yourself for eating breakfast, you know it all, but your head tells you otherwise. It tells you that you're strong for starving yourself, that you don't deserve food, that you look so much prettier if you don't eat, that a single calorie makes you fat and ugly. It even tells you that you're worthless. Your thoughts don't count anymore. You've lost all control. The control you once had, is comepletely gone. You know what you're doing to yourself, but you don't care. Why care when you're eitherway too fat and disgusting, this at least makes you thinner, but you're never thin enough. The last couple of months you've seen the number on the scale drop drastically, but it's never low enough. You're constantly finding new places to squeeze fat, or what you think is fat, but really is skin or a relaxed muscle. You don't care, if it's pinchable, it must go. Your hair is falling out and your skin appears gray. Your teeth and gum hurt. Your body is covered in bruises that you don't remember getting, they just appeared from nowhere. Every movement you make and every step you take hurts. Your muscles are sore and most of all: the spark you once had in your eyes, is completely gone.
Now it's just a matter of time when your heart stops beating and sends you away to a better place. A place where your troubles are nowhere to be seen. One day the beating stops and you're jumping from one cloud to another when you look down, all the way down to earth. You see your family. Your younger brother is crying. He's crying because he lost his only sister. His older sister, who was supposed to look after him, to be there for him, is now gone. Your mom is standing by his side. She's crying too. You have to look away. You can't bare to see your mom crying, even though you two never really got along. A tear slides down your chin. You see your dad coming towards your mom and put her arms around her. Your younger brother joins in and all three of them are now crying together. Your eyes are filled with tears and your cheeks are wet. You wish it didn't go this far. You wish you didn't let this disorder take your life away, that you tried to take control when you had the chance. You wish all this didn't happen. 



"Beep, beep, beep, beep", your alarm wakes you up. You look around yourself and you can't believe it, you're alive! You jump out of bed, get dressed, poor some normal cereal into a bowl and drown it in full fat milk. You pack your lunch, check what time it is and it is 5 to 7 am. It's time you go out the door to catch the only bus that drives through this neighbourhood this time of day. You take one step over the threshold and take a deep breath. The fresh air after a storm fills your lungs. You walk to your bus stop and wait for the bus. When the bus arrives, you get on it, sit down and think to yourself : "Today my life begins!"
