Nicecream

You have probably heard about homemade healthy easy made fruit ice cream and probably even tried it too. It is tasty, isn't it?
If you haven't tried it, here is how I made mine this evening:

Mango Banana Nicecream
Serves 2

1 chopped up, frozen mango
1 frozen banana

Put in a mixer and mix till smooth.

Top off with what ever you want. Frozen berries are really good for topping or even to be mixed in with the banana and mango. Adding some peanut butter is also delish!

Make it look pretty and then TADAH you've made your own ice cream in within 5 minutes!

Raw vegan brownies recipe

Today I made those incredibly fantastic yummy healthy brownies:


Ingredients:
  • 2 cups pecans OR walnuts
  • ¾ cup cacao powder
  • pinch sea salt
  • 2 cups medjool dates
  • ¼ cacao nibs (optional)
Method:
  1. In the food processor, process the pecans until they are a roughly ground flour texture.
  2. Add cacao powder and salt and process again to combine (make sure the lid is on properly so you don’t breathe in the cacao powder cloud).
  3. Add medjool dates and combine until a ball forms.
  4. If you want a more fluffy, airy brownie rather than a dense one, process the pecans less and medjool dates left, stopping before a ball forms.
  5. In a small pan or container, press the brownie mixture down. Sprinkle cacao nibs on top.
  6. Freeze for a few hours to harden and set.
  7. Store in the fridge or freezer (I like the freezer better).
Notes:
For a fudgier brownie, try adding 1-2 Tbsp of liquid sweeter such as maple syrup, agave syrup or coconut nectar.

I didn't process the nuts enough, that's why they're so "chunky" hehe. But they are yummy as well :-D

Berry breakfast

My breakfast this morning:


Yoghurt with raspberries, blueberries and dates. Yum! Definetely one of the best breakfasts I've had in a while.
Funny thing is, before I started recovery, dates were high on my list of fearfoods. But now I can't get enough of them!
And and and and I can proudly say that I've comepletely removed 8 items of my list of fearfoods. Only 39+ to go :-D

Breakfast


My breakfast this morning:

  • Lactose free yogurt, since I'm lactose intolerant at the moment due to lack of nurishment over long time.
  • 1 tbs Sugarfree apple and raspberry jam
  • 6 chopped up fresh dates
After I tasted it, I drizzled some cinnamon over it and it was YUMMY! Definitely going to make this more often!
The beauty of this is that you can use whatever you like! You don't have to use dates, or this kind of jam. If you like apples, then you use apples! You like blueberry jam? then you use blueberry jam! 
Yogurt goes with almost anything. I LOVE IT!
